Hello, welcome back to my space! I’ve made these cookies several times and I absolutely love them so its time for me to share the recipe!

Coconut Macadamia Nut White Chocolate Chip Cookies

Coconut macadamia nut white chocolate chip cookies

Ingredients:

  • 2 1/4 cups of flour
  • 1 1/2 cups of white sugar
  • 2 sticks of softened butter ( I used Miyoko’s)
  • 1 Tablespoon of coconut extract (vanilla extract will work as well)
  • 1 Teaspoon salt
  • 1 Teaspoon baking soda
  • 2 Flax eggs (2 Tablespoons ground flaxseed+ 6 Tablespoons of water)
  • 1/2 cup shredded coconut
  • 1/2 cup chopped macadamia nuts
  • 1/2 cup chopped white chocolate

Method:

  1. Preheat oven to 350 degrees.
  2. Make flax egg by mixing ground flaxseed with water, set aside.
  3. Combine butter, sugar and coconut extract, mix until smooth. Stir in flax egg.
  4. In a separate bowl, combine flour, salt and baking soda, stir until combined.
  5. Add dry ingredients to wet ingredients, stir until incorporated.
  6. Add shredded coconut, macadamia nuts and white chocolate. Stir until incorporated.
  7. Make dough balls with about 2 Tablespoons of cookie dough, place an inch apart on a cookie sheet and bake for 8-12 minuets.
  8. Let the cookies rest on the cookie sheet for 10 minuets before moving them to a cooling rack
  9. Enjoy!
