Hello there 😊 welcome back to my space! Now that I’ve gotten into the routine of posting here, I’d like to do something fun! I don’t know what that is yet but I’m thinking about it! Let me know if you have any suggestions!


Breakfast:

Loaded hash browns

These were so good on Sunday that I had to have them again yesterday! 

Loaded Hash Browns

  • Signature Hash Browns
  • Smashed avocado(salt+pepper)
  • Everything But The Bagel Seasoning

Lunch:

Oyster mushrooms that never made it to a plate
Shiitake mushroom platter

It’s clear that I have an obsession with mushrooms! I made some oyster mushrooms yesterday in a skillet and if you’ve made oysters mushrooms before you know that the volume that you get after you cook them down and there’s no more moisture in them leaves you with little to know what mushroom it’s kind of like spinach. So I started snacking on the mushrooms straight out of the pan and before I knew it they were gone. luckily I had some shiitake mushrooms in the refrigerator so I whip those up by the time I brown rice was done and made this platter!

Oyster mushroom platter

  • Shiitake mushrooms
  • Brown rice
  • Arugula
  • Green onions
  • Cilantro

Dinner:

The best damn fruit salad there ever was

Yo, I could seriously eat this every day of my life! This tastes like the best damn caramel apple I’ve ever had! You NEED to try this combination of flavors!

Caramel apple banana fruit salad

  • Chopped apples
  • Sliced bananas
  • Chopped walnuts
  • Vegan caramel sauce
  • Simple Chocolate sauce (agave+cacao powder)
  • Cinnamon
