Hello there! Welcome back to my space! Honestly, I feel like with the state that the world is in, it’s trivial to talk/write/share about what I ate yesterday. In an effort to keep cool and calm, I will continue to share trivial things, serious things, thoughtful things and inspiring things? let’s get into it!


Breakfast:

Orange Cream Smoothie Prep

I really love this combination of flavors so I had this delicious smoothie again yesterday!

  • Orgain vanilla protein powder
  • Raw Cashews
  • Cara Cara oranges
  • Spinach
  • Banana

Put all of the ingredients into your blender along with enough water to reach desired consistency and blend until smooth!


Lunch:

Mixed Green Salad

When I tell you hummus on salad is Amazing, you must believe me, stop what you’re doing and try it! So freaking delicious!

Mixed Green Salad

  • Mixed Greens
  • Tomatoes
  • Avocado
  • Hummus
  • Kalamata olives
  • Red onion
  • Cucumber
  • Salt
  • Pepper

Dinner:

Tofu Quesadilla

I slapped these delicious Seasoned tofu quesadillas together in a matter of minutes! I used Good Planet smoked mozzarella and cheddar cheese shreds! I also served these with roasted zucchini eaten out of the pan??


Dessert:

Chocolate cupcake with coconut ice cream

This Cupcake had been calling my name for a few days and finally, I answered ??. Served with Coconut Bliss coconut ice cream. So damn delicious!


Snacks:

  • Pretzels
  • Tortilla chips
  • Banana ×2
  • Cold Mac and cheese
