Hello there and welcome back to my space! Yesterday I was feeling completely uninspired in the kitchen and then I saw that we had potatoes!!!! Que to sudden burst of inspiration! Let’s get into it!


Breakfast:

Pineapple Cherry Smoothie Prep

Went back into the archives for this delicious smoothie! Pineapple and cherry go so well together ?

Pineapple Cherry Smoothie

  • Frozen Pineapple
  • Frozen Cherries
  • Banana
  • Spinach
  • Orgain vanilla protein powder

Lunch:

Loaded Carrot Apple Bread

I discovered I still had a bit of the Carrot Apple Bread and it was on and Poppin ? I made some Sweet Cashew Cream and Vegan Caramel Sauce cut up some bananas and made this EPIC lunch! I highly recommend this combination of flavors ?


Dinner:

Roasted potatoes, Greek salad, roasted broccoli, creamy potatoes

Dinner was so damn tasty last night! I’m so glad I saw those potatoes, otherwise we would have had corn dogs ?

Greek salad:

  • Cucumber
  • Tomatoes
  • Red pepper
  • Red onion
  • Arugula
  • Kalamata olives
  • Salt
  • Pepper
  • Balsamic vinegar
  • Garlic olive oil

Roasted potatoes

  • Potatoes
  • Salt
  • Pepper

Creamy potatoes:

Cut potatoes into thick slices
Pour watered down Cheezy Garlic Cashew Cream on top
Add Italian spices
Bake covered for 45-60 minutes

Snacks:

Mandarin Orange and Banana Fruit Salad
  • Gardettos
  • Banana
  • Cinnamon toast crunch cereal
  • Red vines
