Hello there. Welcome! Yesterday was definitely a comfort food eating day! The weather was so gloomy and all I wanted was HOT food, well besides me daily smoothie!


Breakfast:

Persimmon Lemon smoothie

This smoothie was so damn delicious 😋 we have a persimmon tree so I took the fruit cut it up and froze it! I’m so glad I did this so that I can enjoy these delicious persimmons for a bit longer! The combination of persimmon and lemon is so tasty! I highly recommend this combination of flavors!

Lunch:

Teriyaki oyster mushrooms, mashes potatoes, roasted broccoli stalks with celery

This was a lunch of all leftovers! It was soooooo freaking delicious! I was so sad that this was the last of all of my leftovers.


Dinner:

Pasta with marinara sauce and beyond meat Italian sausage

On to the next comfort food item! We have pasta with red sauce at least once a week and I love how simple it is to make this meal! It’s delicious and hits the spot every time!


Method:

I chop the sausage into small pieces. Heat up a skillet with a little avocado oil. Toss the sausage pieces into the skillet. I add a little garlic powder and Italian spices and cook for 5-7 minutes. I then add a jar of marinara sauce and cook until heated through. Boom! Delicious!
