Hello there and welcome back to my space ? let’s get into what I ate yesterday!
Breakfast:
I love it when I make a smoothie combination that is so good, I have to keep revisiting it! This smoothie is so tasty, y’all really need to try this combination!
Strawberry banana cream smoothie
- Frozen strawberries
- Bananas
- Raw cashews
- Spinach
- Orgain vanilla protein powder
Put all of the ingredients into your blender along with enough water to reach desired consistency and blend until smooth! Taste to adjust flavors. Enjoy!
Lunch:
Y’all, I am having a straight up love affair with arugula!!! One of the Instagramers that I follow, Morgan aka @kingxmorg swears by arugula because of its incredible heath benefits so I decided to get some! I know I’ve had it before but that was before I went vegan! My tastes have changed so much since then, I now CRAVE nutritious food! The thing I love about arugula is that it is so flavorful! Drizzle a lemon juice, salt and pepper and it’s AMAZING! That’s just what I did for the base of this amazing salad!
Arugula salad:
- Arugula seasoned with lemon juice, salt and pepper.
- Cucumbers
- Tomatoes
- Kalamata olives (also obsessed)
- Avocado
- Pine nuts
- Hemp seeds
- Hummus
Dinner:
While reading to my son the other day, we read a story about making soup. They put all sorts of vegetables inside of the salad and when we were done reading my son asked me if he could make soup. I said of course and he helped me make this soup yesterday! It’s pretty simple just onions, broccoli and potatoes with some veggie broth! That’s all he wanted to add! It was so delicious especially after I added Cheezy garlic cashew cream !
Snacks:
- Apple
- Plantain chips
- Almonds
- Nugo protein bar ×3 ? ( let’s just be real, these are high protein candy bars and they are so damn delicious ?)
