Hello there beautiful people! Welcome back to my space! Yesterday was an amazing day! I spent the day at my dear friend Lisa’s house for an an event called Super Power U. This event takes place once a month where women gather and tell their amazing stories! I always leave the event inspired. Anywho, let’s get into what I ate yesterday!
Breakfast:
I spent entirely too long getting ready yesterday and I didn’t have much time for breakfast but I was super hungry so I made this little to go platter: apples, sun butter and dates. Hella tasty, hella satisfying!
Brunch:
This is a platter made of the plant based options provided at the Super Power U event that I went to! I ate this plate times 2??

- Asparagus
- Plant based cheese
- Olives
- Bagel with plant based cream cheese
- Smashed avocado
- Tofu scramble
- Field Roast sausage
Dinner:
I was not hungry at all when it came to eating dinner last night! I made my family Mac and cheese and pasta with red sauce and had the desire to eat it but not the hunger so I opted for the arugula salad. It was simple and delicious!
Arugula salad
- Arugula tossed with Cheezy garlic cashew cream, nutritional yeast, salt and pepper
- Tomatoes
- Hemp seeds
- Kalamata olives
Snacks:
- Safeway select mint fudge cookies
- Tortilla chips
