Hello, welcome back to my space! I’ve made these cookies several times and I absolutely love them so its time for me to share the recipe!
Coconut macadamia nut white chocolate chip cookies
Ingredients:
- 2 1/4 cups of flour
- 1 1/2 cups of white sugar
- 2 sticks of softened butter ( I used Miyoko’s)
- 1 Tablespoon of coconut extract (vanilla extract will work as well)
- 1 Teaspoon salt
- 1 Teaspoon baking soda
- 2 Flax eggs (2 Tablespoons ground flaxseed+ 6 Tablespoons of water)
- 1/2 cup shredded coconut
- 1/2 cup chopped macadamia nuts
- 1/2 cup chopped white chocolate
Method:
- Preheat oven to 350 degrees.
- Make flax egg by mixing ground flaxseed with water, set aside.
- Combine butter, sugar and coconut extract, mix until smooth. Stir in flax egg.
- In a separate bowl, combine flour, salt and baking soda, stir until combined.
- Add dry ingredients to wet ingredients, stir until incorporated.
- Add shredded coconut, macadamia nuts and white chocolate. Stir until incorporated.
- Make dough balls with about 2 Tablespoons of cookie dough, place an inch apart on a cookie sheet and bake for 8-12 minuets.
- Let the cookies rest on the cookie sheet for 10 minuets before moving them to a cooling rack
