Does anyone else plan their meals according the saddest looking vegetable in the refrigerator? This meal was inspired by the sad looking kale. I washed it, chopped it up and made this delicious fried rice!
KALE FRIED RICE
Kale Fried Rice

Ingredients
- bunch of kale chopped into bite size pieces (stems removed)
- 3 cups day old brown rice
- 1/2 of a yellow onion diced
- 3 cloves of garlic (or to your liking, I LOVE garlic)
- 3 tablespoons of soy sauce/tamari/or coconut aminos
- 1 Tablespoon avocado oil
- 1/2 teaspoon sesame oil
- toasted sesame seeds for garnish
Instructions
- Heat avocado oil in a wok medium high heat.
- Add chopped garlic and onion, sautee, stirring occasionally until soft.
- Add kale, saute for another 5 minutes.
- Add cooked brown rice, sesame oil and soy sauce, heat thoroughly.
- Serve immediately, garnish with toasted sesame seeds.
