Good afternoon beautiful people ?? Yesterday was a comfort food eating day! I would usually start my day with a smoothie but I took the day off so I started with friend enoki mushrooms! They were amazing!!!
Breakfast:
I don’t usually eat a lot of fried food but I do make exceptions from time to time! These were so freaking worth and and I will be making them again and sharing the process.
Fried Enoki Mushrooms:
- flour
- onion powder
- garlic powder
- paprika
- salt
- pepper
- soy milk
- liquid smoke
- ground flaxseed
- avocado oil
- Combine soy milk and liquid smoke in a medium sized bowl
- In a separate bowl, combine flour, onion powder, garlic powder, paprika, salt and pepper. Stir until incorporated.
- Dip small bunches of enoki mushrooms into the soy milk. Let excess liquid drip off and pat the mushroom in the flour mix. Toss to coat.
- Place in a skillet heated oil on medium heat. Cook on both sides for about 5 minuets.
- Place on a place lined
- Enjoy!
Lunch:
I quickly made this bean and avocado burrito thinking that I would take a bit and save it for my husband. That was not the case. Haha. I seasoned the beans with chili powder, garlic powder, onion powder, cumin and salt.
Snack:
Have any of you been forced to eat a sandwich because your kid refused to eat it?? No, just me! That was the case with the always delicious, classic, peanut butter and jelly sandwich!

Dinner:
Last night I went to my lovely friend Crystals for a little gathering called Supper Club! She has this event at her house once a month where anywhere from 5-20 goddesses gather together and share a plant based meal. Last night we had a variety of kale, sweet potatoes, rainbow chard, brussel sprouts, onions, vegan ricotta, pine nuts, roasted mulberries, pomegranates, persimmons, cannellini beans, cauliflower, purple horseradish vinaigrette. Everything was AMAZING!
Unfortunately, I did not take any pictures of my food because I arrived late!
Snacks:
- Apple
- Banana with peanut butter
- Plantain Chips
