#whatiateyesterday 2/26/20

Hello and welcome back to my space 😁 Yesterday I circled back around to a few of my favorite meals from the last few weeks!


Breakfast:

Blueberry cream smoothie

I seriously can’t get enough of this combination of flavors! It’s so good! After the consistency issue I had with the apple in my smoothie on Tuesday, it sent me running back to this combination!

Blueberry cream smoothie:

  • Frozen blueberries
  • Banana
  • Spinach
  • Raw cashews
  • Orgain vanilla protein powder

Put all the ingredients into the blender with enough water to reach desired consistency and blend until smooth! Taste to adjust flavors, enjoy!


Lunch:

Arugula salad

I’m absolutely loving arugula in all of the ways! This is definitely going to be a salad that I revisit often because it’s so freaking delicious!

Arugula salad:

  • Arugula seasoned with lemon juice, salt and pepper.
  • Cucumbers
  • Tomatoes
  • Kalamata olives (also obsessed)
  • Avocado
  • Pine nuts
  • Hemp seeds
  • Hummus

Dinner:

Oyster mushroom/enoki mushrooms, brown rice and sauteed arugula

It’s been entirely too long since I’ve had oyster mushrooms! I just went back and counted, it’s been 8 days!!! 8 days too long! Such a simple delicious dinner! Served with brown rice and sauteed arugula! This combination of flavors is too delicious!


Snacks:
