#whatiateyesterday 2/25/20

Hello and welcome back to my space! Yesterday was the 30th day in a row of posting here on my blog! I’m super proud of myself! This has been a goal of mine for awhile but the task seemed daunting! Now that I have worked it into my daily routine, I see that it’s not challenging at all! Thank you so much for checking my space out and let me know if you have any questions, I’m here to help! Breakfast:

Apple Cream Smoothie

In keeping with my idea a few days ago to try every fruit flavor combination with raw cashews, I tried apple yesterday! Although this smoothie was delicious, I didn’t love the consistency and wouldn’t make this exact combination again.


Lunch:

Spinach Salad

The warm weather makes me CRAVE fresh food and I love it! This is the last of the salad that I made on Sunday and I’m sad to see it go but happy to move on!

Spinach Salad

  • spinach
  • red peppers
  • red onions
  • cucumber
  • tomatoes
  • carrots
  • kalamata olives
  • sesame seeds
  • hemp seeds
  • balsamic vinegar
  • garlic olive oil
  • salt
  • pepper
  • cheezy garlic cashew cream

Snack:

Bean Dip and Tortilla Chips

I made bean dip on Saturday using black beans and Parmela Creamery Nut Cheese, pepper jack style! I absolutely love this cheese! It melts well and has a nice flavor.

Bean Dip

Method:

Put the beans into your blender with enough water to blend. Blend until smooth. Add beans to a pot and heat on medium. Add cheese and stir until melted. Add seasonings. Enjoy!


Dinner:

Hamburger Helper Style Pasta

When I tell you this pasta was EVERYTHING, I mean it! It was so nostalgic and tasty! As with most of my meals, there is no recipe but I can walk you through how to make this deliciousness!

Ingredients:

Hamburger Helper Style Pasta

  1. Cook pasta according to package
  2. Strain pasta and leave in strainer.
  3. Cook sausage in the same pot used for the pasta, I used Beyond Meat Italian sausage.
  4. When the sausage is done cooking, add cooked pasta and marinara sauce.
  5. Add Cheese and stir until melted, I used Parmela Creamery Pepper Jack style nut cheese
  6. Taste and adjust flavors, Enjoy.

Snack:

Banana Mandarin Orange Fruit Salad

When I tell you that this is one of the best things I’ve ever had, you NEED to believe it! You need to try this combination of flavors, its amazing!!!!
