Ingredients
- 2 pounds of cremini mushrooms
- 3 carrots
- 1/2 yellow onion
- 3 pounds of potatoes
- 6 cups of veggie broth
- 2 teaspoons of italian spices
Instructions
- Place all veggies except the potatoes, inside of a food processor, process until minced.
- Saute mixed veggies over medium heat in a stock pot with a drizzle of olive oil for about 5 minutes
- Add the potatoes, stir for another 5 minutes, then add veggie broth
- Simmer for 20 minutes and add salt to taste.
