Hello there and welcome back to my space! In the past few days I have had several people request that I make a book of my recipes! I flirted with that idea a few times over the past few years but the thought seems so overwhelming! If I were to embark upon this journey, what would you like to see in this book? Inquiring minds want to know! Anywho, let’s get into #whatiateyesterday!


Breakfast:

Pineapple Mango Raspberry Smoothie prep

After several days of very basic smoothies I was in the mood for something juicy! This smoothie combination did not disappoint!

Pineapple Mango Raspberry Smoothie

Put all of the ingredients into your blender along with enough water to reach desired consistency and blend until smooth! Taste to adjust flavors, enjoy!


Lunch:

Leftover Stir Fry and Brown Rice

As you can tell, I LIVE for leftovers! I do not like food going to waste! I thoroughly enjoyed two servings of this Stir Fry for lunch yesterday!


Dinner:

BBQ Seitan Bites with Asparagus
Arugula Salad

Last night’s dinner was AMAZING! I was pressed for time so I didn’t get to do a step by step tutorial on how to make the seitan but I will do one soon! It’s super simple so stay tuned!

BBQ Seitan (loosely based of this Tasty Seitan Roast recipe)

Method:

  1. Preheat oven 375
  2. Add can of chickpeas, water, boullion, seasonings and avocado oil to blender and blend until smooth.
  3. Add mixture to bowl.
  4. Add vital wheat gluten a little bit at a time stirring with a fork. Add until the mixture looks like moist dough
  5. Knead the dough for about 2 minutes
  6. Pinch off bite sized pieces and put on a parchment paper lined cookie sheet
  7. Put into the oven baked for 20-25 minutes, flipping halfway through.
  8. Toss to coat with your favorite sauce!

Asparagus

Chopped and cooked on medium heat with a little avocado oil, salt, garlic powder and pepper. Cook for about 5 minutes.

Arugula salad

  • Arugula
  • Lemon juice
  • Salt
  • Pepper
  • Tomatoes
  • Kalamata olives
  • Avocado
