#whatiateyesterday 2/29/20

Hello there and welcome back to my space! Yesterday was absolutely delicious! Let’s get into it!

Breakfast:

Raspberry Pineapple cream smoothie prep

Just when I thought yesterday’s smoothie couldn’t get any better, I added pineapple and it was on and Poppin! This smoothie was refreshing and delicious! I highly recommend this combination of flavors!

Put all ingredients into your blender along with enough water to reach desired consistency and blend until smooth! Taste to adjust flavors, enjoy!

Lunch at Yalla in Dublin

Falafel platter with hummus, Greek potato salad, roasted vegetables, baba ganoush and rice
Falafel platter with baba ganoush, hummus, carrot salad, rice, lentils, roasted vegetables
The Lebanese pita wrap with onions, pickles, baba ganoush, cabbage and the The Impossible patty

My family loves going to Yalla in Dublin because there is a little something for everyone and it’s very vegan friendly! I had a little bit of each of the platters and the Lebanese pita wrap. The wrap was filling and very flavorful!

Snack:

Whole Foods vegan donuts: maple, cinnamon sugar, crumb and vanilla.

Whenever we are near Whole Foods, we make sure to stop in and get vegan donuts! They are usually located on the top row of the donut case. If you get there early enough, they have a great variety of flavors!

Dinner:

Morning star corn dog and roasted cauliflower

My family is officially hooked on these Morning Star corn dogs, they are so nostalgic! I definitely recommend baking them in the oven! It takes about 20 minutes but it’s totally worth it! I highly recommend these corn dogs!

Roasted cauliflower:

  1. Preheat oven to 400
  2. Chopped cauliflower into bite sized pieces
  3. Season with salt, pepper, garlic powder
  4. Add a little avocado oil and toss
  5. Bake for 15-20 minutes stirring at the halfway point.
  6. Enjoy!

Snacks:

  • Tortilla chips
  • Sunflower seeds
  • Cashews

Thanks so much for stopping by! See you tomorrow!
