It’s so late, I contemplated not doing this at all today because my meals yesterday were basic and boring and there were only two but in an effort to be consistent I’m showing up anyway!
Breakfast:
I am absolutely LOVING meyer lemons in my smoothies! It adds this delicious tartness without being too sour! This smoothie was so tasty!
Super sunshine smoothie:
- Orgain vanilla protein powder
- Meyer lemon
- Frozen pineapple
- Frozen mango
- Spinach
- Flaxseed (not pictured, it’s always an afterthought)
Lunch:
This salad was so freaking amazing!!!!! I rushing to get out of the door to go to an event and I didn’t know if they would have vegan options so I whipped this bowl of deliciousness up!
Teriyaki salad:
- Teriyaki oyster mushrooms
- Tomatoes
- Avocado
- Sesame seeds
- Hemp seeds
- Toasted sesame oil
- Soy sauce
- Spinach
- Mixed greens
- Crispy onions
Dinner:
I was at an event and ended up eating bread, crackers, hummus and olives for dinner. It wasn’t a bad combination! While I was there I discovered an olive that I had never eaten before called a dried kalamata. Apparently, instead of being soaked in brine, they are dried and packaged in oil. I definitely want to use these mushrooms to make some sort of spread!
