Hello there and welcome back to my space! In the past few days I have had several people request that I make a book of my recipes! I flirted with that idea a few times over the past few years but the thought seems so overwhelming! If I were to embark upon this journey, what would you like to see in this book? Inquiring minds want to know! Anywho, let’s get into #whatiateyesterday!
Breakfast:
After several days of very basic smoothies I was in the mood for something juicy! This smoothie combination did not disappoint!
Pineapple Mango Raspberry Smoothie
- Orgain vanilla protein powder
- Pineapple
- Raspberry
- Mango
- Banana
- Spinach
Put all of the ingredients into your blender along with enough water to reach desired consistency and blend until smooth! Taste to adjust flavors, enjoy!
Lunch:
As you can tell, I LIVE for leftovers! I do not like food going to waste! I thoroughly enjoyed two servings of this Stir Fry for lunch yesterday!
Dinner:
Last night’s dinner was AMAZING! I was pressed for time so I didn’t get to do a step by step tutorial on how to make the seitan but I will do one soon! It’s super simple so stay tuned!
BBQ Seitan (loosely based of this Tasty Seitan Roast recipe)
- Better than bouillon no chicken chicken broth
- Vital wheat gluten
- Chickpeas
- Spices (I used Montreal steak seasoning)
- Avocado oil
Method:
- Preheat oven 375
- Add can of chickpeas, water, boullion, seasonings and avocado oil to blender and blend until smooth.
- Add mixture to bowl.
- Add vital wheat gluten a little bit at a time stirring with a fork. Add until the mixture looks like moist dough
- Knead the dough for about 2 minutes
- Pinch off bite sized pieces and put on a parchment paper lined cookie sheet
- Put into the oven baked for 20-25 minutes, flipping halfway through.
- Toss to coat with your favorite sauce!
Asparagus
Chopped and cooked on medium heat with a little avocado oil, salt, garlic powder and pepper. Cook for about 5 minutes.
Arugula salad
- Arugula
- Lemon juice
- Salt
- Pepper
- Tomatoes
- Kalamata olives
- Avocado
Snacks:
- French bread and garlic spread and hummus
- Mint Chocolate Builder bar
