Good morning beautiful people! Welcome back to my space! Yesterday I did something new and made asian-inspired noodles and I’ve included a pictorial! Enjoy!


Breakfast:

Left over Chinese food

I would usually have a smoothie after my workout but while I was at the gym I could not stop thinking about the leftover Chinese food that I had at home. When I was coming home from the gym my husband was already warming up Chinese food and so this is what I had for breakfast/post workout meal!

  • Vegetarian lemon chicken
  • Vegetarian chow mein
  • Salt and pepper tofu
  • Mixed mixed vegetables
  • Veggie fried rice

Lunch:

Cacao coconut smoothie

This smoothie was so dang delicious! It was like a chocolate flavored Chick-O-Stick! I definitely recommend this combination of flavors!

  • Frozen bananas
  • Spinach
  • Cinnamon
  • Shredded coconut
  • Peanut butter
  • Cacao powder

Method:

Put all ingredients into a blender with enough water to reach desired consistency, blend until smooth, taste to adjust flavors, enjoy!


Dinner:

Side salad
Broccoli and mushroom noodles

Salad:

  • Parsley
  • Red wine vinegar
  • Salt
  • Pepper
  • Cucumber
  • Tomatoes
  • Red onion

Broccoli and mushroom noodles

  • Broccoli
  • Mushrooms
  • Pasta
  • Onions
  • Soy sauce
  • Ginger
  • Cornstarch
  • Pepper
  • Sesame oil

Method:

Saute garlic and onions on medium heat
Add broccoli, cook for 3-5 minutes
Add mushrooms, cook for 3 minutes
Add soy sauce
Add a mixture of water and cornstarch, cook until it thickens
Add ginger, pepper and more soy sauce I’d needed
Add cooked noodles
Stir noodle in and adjust flavors
Enjoy

Snacks:

  • Apple
  • Tortilla chips
  • Banana
  • Peanuts
