Hello Love and welcome back to my space! I promised that I would share these delicious donuts months ago but life got in the way, lol. You can use a muffin pan for these as well, my family just prefers donuts! Now that I am in this space daily, it’s not so daunting to share recipes! So here it is! Thanks for you patience!
Ingredients:
- 1 cup of sugar
- 1 stick of plant based butter
- 2 flax eggs ( 2 tablespoons ground flax+6 tablespoons liquid, I used homemade cashew milk)
- 3 ripe bananas
- 1 tablespoon plant based milk
- 1 teaspoon ground cinnamon
- 2 cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
Directions:
- Preheat over to 350 degrees
- Make flax egg
- In a bowl mash bananas and vanilla until smooth with a few chunks
- Cream sugar and butter in a large mixing bowl until light and fluffy
- Add flax eggs and banana mixture to the butter sugar mixture, stir until combined
- In another bowl, mix together flour, baking soda, baking powder and salt
- Add flour mixture to wet mixture, stir until combined
- Bake for 12-15 minutes for large donuts,15-18 for muffins
- Enjoy
Although the donuts/muffins can be eaten without the glaze, the glaze adds a lil razzle dazzle!
Simple Glaze:
- 2 cups of powdered sugar
- 2-4 tablespoons of liquid (I used homemade cashew milk)
- Dash of vanilla
Mix ingredients together in a bowl until combined. If the mixture is too thin, add a bit more powdered sugar, if it’s too thick, add a bit more liquid 1/2 teaspoon at a time.
