Vegan Banana Donuts

Hello Love and welcome back to my space! I promised that I would share these delicious donuts months ago but life got in the way, lol. You can use a muffin pan for these as well, my family just prefers donuts! Now that I am in this space daily, it’s not so daunting to share recipes! So here it is! Thanks for you patience!

Ingredients:

  • 1 cup of sugar
  • 1 stick of plant based butter
  • 2 flax eggs ( 2 tablespoons ground flax+6 tablespoons liquid, I used homemade cashew milk)
  • 3 ripe bananas
  • 1 tablespoon plant based milk
  • 1 teaspoon ground cinnamon
  • 2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Directions:

  1. Preheat over to 350 degrees
  2. Make flax egg
  3. In a bowl mash bananas and vanilla until smooth with a few chunks
  4. Cream sugar and butter in a large mixing bowl until light and fluffy
  5. Add flax eggs and banana mixture to the butter sugar mixture, stir until combined
  6. In another bowl, mix together flour, baking soda, baking powder and salt
  7. Add flour mixture to wet mixture, stir until combined
  8. Bake for 12-15 minutes for large donuts,15-18 for muffins
  9. Enjoy

Although the donuts/muffins can be eaten without the glaze, the glaze adds a lil razzle dazzle!

Simple Glaze:

  • 2 cups of powdered sugar
  • 2-4 tablespoons of liquid (I used homemade cashew milk)
  • Dash of vanilla

Mix ingredients together in a bowl until combined. If the mixture is too thin, add a bit more powdered sugar, if it’s too thick, add a bit more liquid 1/2 teaspoon at a time.
