Good morning beautiful people ?? Yesterday I was able to make a pictorial of one of my all time favorite simple meals! You need to make these creamy chickpeas, they are AMAZING ♥️


Breakfast:

Avocado toast with tomatoes, hemp seeds, sesame seeds red onion
Peanut butter toast with shredded coconut, dates, cinnamon, flax seed

Yesterday was my day off from the gym so I didn’t have my usual smoothie! I started my day with avocado toast and peanut butter toast!

Avocado toast:

  • Avocado
  • Tomatoes
  • Red onion
  • Sesame seeds
  • Hemp seeds
  • Salt
  • Pepper
  • Dave’s Killer Bread

Peanut butter toast:

Both of these were delicious in their own way! I definitely recommend both combinations!


Lunch:

Parsley Salad

I had all of these grand ideas about all of the things I would add to this salad (chickpeas, hemp seeds, pine nuts, olives) but I ate it too fast, haha. I love having leftovers that I can grab quickly!


Dinner:

Creamy chickpeas with mushrooms and spinach

This is one of my all time favorite meals! It always hits the spot!

Creamy chickpeas:

Method:

  1. Heat 2 teaspoons of avocado oil in a skillet, add chopped onions and garlic. Cook for about 5 minutes
  2. Add mushrooms and cook for about 3 minutes.
  3. Add chickpeas and toss to incorporate
  4. Add mix of water and bouillon, bring to a boil.
  5. Add cheezy garlic cashew cream. Cook until this mixture thickens. Keep a cup of water near just in case the mixture gets to thick. Add water to reach your desired consistency.
  6. Add Italian spices, stir to incorporate
  7. Add spinach, stir in until wilted
  8. Taste and adjust flavors.
  9. Enjoy ?

You can get creative with this recipe adding different spices and vegetables but this is a pretty good start!


Snacks:

  • Sesame crackers
  • Apples with peanut butter
  • Beanfield chips
